Slow Cooker Chili Ingredients
- 1 pound ground angus beef, grass fed if possible
- 1 butternut squash, peeled, seeded and chopped into cubes
- 2 ½ cups unsalted beef stock
- 1 yellow onion chopped
- 1 cup of red and yellow peppers chopped
- 1 can of tomato paste 6 oz
- 2 tablespoons of chili powder
- 2 teaspoons of ground cumin
- 2 teaspoons paprika
- 1 teaspoon of chili flakes (Add more chili flakes if you want spicy chili)
- 1 15 ounce can black beans drained and rinsed
- 3 large tomatoes diced or 2 cans of diced tomatoes
- 1 cup of fresh cilantro
- Salt and pepper to taste
- 4 ounces of sharp cheddar cheese shredded
Brown the ground beef on the stove and set aside. Combine all ingredients not including the cilantro and cheese into the slow cooker. Stir beef into the slow cooker. Cover and cook on high for 4 hours and then turn to low for another 2 to 3 hours. Serve your tasty slow cooker chili with cilantro and cheddar cheese. You can add avocado too!
