Roast Chicken

There are many ways to roast a chicken. We all have our favorites.

Some of our other favorite ways include these.

One method is to gently pry the skin from the chicken just enough to get your fingers under the skin. Add about 1 to 2 Tablespoons of butter under the skin. You can either use just butter or you can soften it slightly and add herbs to the butter before you roast the chicken.

Another way we roast chicken is to cut a lemon in half and place it in the cavity. Add some favorite herbs in the cavity as well. We like to use rosemary, thyme, and parsley.

One more way to include additional flavor is to add an onion half with some salt and pepper to the cavity before cooking.

Remember you can add flavor to the roast chicken by adding herbs or spices to the skin before cooking. Mix olive oil or melted butter with your favorite herbs and pour or paste over the skin. Depending on the temperature you use, these may tend to burn. You may need to cover the chicken for part of the cooking time to ensure the herbs and spices do not get too blackened.

We like to add vegetables to include with our dinner. It is a good idea to let the chicken roast at least half way before adding them or the vegetables will get too well done. Some of our favorite vegetables to add to roast chicken include potatoes, sweet potatoes, carrots, onion, celery, mushrooms, and green beans. If you like your green beans with a slight crunch, they should only be in the pan for 10 minutes.
