Classic Belgian Waffles with Yeast

If you like fluffy yet crispy waffles then this recipe is for you! These classic Belgian waffles are best if you make the batter with the eggs at room temperature. You can set the eggs on the counter the night before you make these authentic waffles. If you forget to take the eggs out of the refrigerator the night before then separate the egg yolks from the egg whites before you start making the batter. Putting the eggs in lukewarm water will also get them to room temperature quicker.

When you reach the end of this classic Belgian waffle recipe make sure you fold the egg whites into the waffle batter with a large spatula or wooden spoon. Let the waffle batter sit for an hour and fold over every 15 minutes. The waffle mixture will rise and get light and airy. Gentle is the key here…or at least that’s what I think!

Classic Belgian Waffle Recipe
  • 1 ½ cups lukewarm water, divided
  • 2 ¼ teaspoons active yeast
  • 3 cups flour
  • ¼ teaspoon salt
  • 4 large eggs, room temperature, separate whites and yolks because you need both
  • 1/3 cup sugar
  • 1 ½ cups whole milk
  • 8 tablespoons butter, melted (not hot)
  • 2 teaspoons vegetable oil
  • 2 teaspoons pure vanilla extract
Instructions
  1. In large bowl dissolve yeast in water with a pinch of the sugar. Let stand 5 to 10 minutes. Mixture should foam.
  2. In a separate medium bowl add flour and salt.
  3. To the yeast mixture add the egg yolks and remaining sugar. Stir with whisk or fork to blend.
  4. Add remaining water, milk, melted butter, oil, and vanilla to the yeast mixture and beat with mixer until smooth.
  5. Add the flour mixture and beat until smooth or no large lumps remain.
  6. Beat egg whites until stiff. Fold gently into batter.
  7. Let batter stand for 1 hour, gently folding every 15 minutes.
