Ingredients for Cheesy Breadsticks from Scratch:
1 cup warm water
1 teaspoon dry yeast
1 teaspoon salt
1 teaspoon sugar
2 to 2 ¼ cups flour
½ cup grated cheese
Preparation for Cheesy Breadstick Recipe from Scratch:
Warm the water to just lukewarm. You do not want it too hot or it will not allow the yeast to bloom. Place the water in a large bowl. I like to use my stand mixer as it works the dough for me. It is important to mix everything well.
If you want to do this by hand, you can. Be sure to get all ingredients mixed together and worked into the dough. A large, sturdy wooden spoon works best when making this cheesy breadstick recipe from scratch.
Add yeast, salt, and sugar to the warm water. Let this mixture sit for about 5 minutes. You should see some bubbling action in the bowl. This means the yeast is doing what it is supposed to do for the dough.
Mix and flour and salt together. Add to the wet ingredients and mix. For your cheesy breadstick recipe from scratch, you may use your favorite cheese. Decide what you will be serving these with and use a cheese to compliment your other food. Add the cheese to the dough and continue to mix until everything is blended. The dough should be stiff and yet it should be able to be mixed. You do not want any dry flour visible. You also do not want the dough to be too runny.

After the dough is all mixed together, cover the bowl and let it rise to room for about 2 hours. I use a warm, damp towel and place the bowl in a warm spot. Make sure the bowl is not in a hot spot or the dough will rise too quickly.
Once the dough for these cheesy breadsicks has risen, remove it from the bowl. Place it on a floured surface, like a counter top or large cutting board. Use something where it is safe to cut.
Roll dough into 9 x 13 rectangle with a floured rolling pin. At this point you can sprinkle with more cheese if desired.
Cut into long, thin strips with sharp knife. You could also use a pizza cutter if it is easier. The strips should be about 1/2 inch wide.
Lay strips on parchment paper lined baking sheets. Try not to crowd the pan. Use as many sheets as needed to give the cheesy breadsticks from scratch area to rise and bake. Dab with olive oil. Sprinkle with salt.
Bake in preheated oven at 400 degrees for 10 to 15 minutes, or until golden in color.
Try this alternate suggestion:
When your dough has risen, remove from the bowl and place it on a floured surface. Pinch off small pieces about the size of a walnut. Roll the piece in your floured hands and on the floured surface. Make a long cigar-shaped piece. You want to get this thinner rather than too thick. Place these on parchment paper lined baking sheets and brush with a little oil. You may need to adjust the baking time, depending on the thickness of the cheesy breadstick.
